A profound and unique expression of Picpoul. Zippy, bright and fresh. Notes of honeydew, crisp apple, fresh fig, lime juice and zest.
Hand-picked and foot tread before pressing, allowing for a small amount of pre-fermentation skin contact. Wine underwent a 12-month fermentation in all neutral oak before the wine was racked off its lees and left to rest for two additional months before bottling.
