Grapes were macerated for 4 hours on the skins and fermented in stainless steel. The wine was aged in barrel for 3 months before bottling for secondary fermentation. It was aged 6 months in bottle before being disgorged by hand. This short tirage time emphasizes the wine’s freshness.
Manchester Ridge sits at 2,000ft elevation above Anderson Valley. The vineyard is 400 feet above the fog line. Cool, steady temperatures allows the grapes to maintain acidity, while the surrounding pine tree forest seem to impact earthy aromas. Organic practicing.
