This Chardonnay is reminiscent of a Meursault. Classic hints of lemon, lemon curd, baking spice with a hint of vanilla. A perfectly balanced textural tone throughout the wine, with plenty of mineral cut to back it up.
Native yeasts begin this fermentation in a combination of neutral wood barrique and stainless barrel. Battonage once a week for the first month to add texture, mouthfeel and enhance minerality. Aged 8 months sur lie until bottling.
Grown on marine sedimentary, sand and clay loam in Arroyo Grande Valley, Santa Maria Valley and Sta. Rita Hills.
