Pretty and lifted aromas of raspberry, cherry, cola, clove, and some forest floor. The palate is light to medium in weight with sasparilla, clove, forest floor, cherry and brambly raspberry.
100% destemmed and punched down twice daily. Fermented with native yeasts, followed by malolactic by naturally occurring bacteria. Upon completion of primary and secondary fermentation sulfur was added. The wine was then racked to tank to settle for an additional six months.it was then racked from tank to tank to eliminate sediment. Aged in neutral barrel 18 months and bottled unfined and unfiltered.
