Liwa is the Miwok name for water, and this thirst-quenching Grüner is made in collaboration with Inizi winery (Guernville, CA.)
The fruit was destemmed and skin soaked for 24hrs. After 24hrs the fruit was pressed and allowed to cold settle for 48hrs. After 48hrs the juice was allowed to naturally warm until fermentation started. Fermentation was held at 56°F until RS dry. Once the fermentation was confirmed dry the wine was lightly sulfured to prevent ML fermentation. The wine was then aged on its lees until filtering and bottling 5 months later.
