Grapes are picked in late September or early October and go through a short maceration and gentle pressing. The wine ages for 9 months in a combination of stainless steel and cement before it goes to bottle. The wines receive a small dose of SO2 at bottling and are bottled unfined & unfiltered.
Vines are planted at an elevation of roughly 750ft above sea level. The soils are made up of limestone with outcroppings of ancient fossil beds. The vineyard has a south/southwest exposure. All their vineyards are farmed certified organically with certification completed in 1997.
